Our two lines
The same trees, the same hand-picking — then two routes that do not produce the same oil. Each line is named after its mill.
PREMIUM
La Lumière de l'Olivier
Closed-cycle continuous mill, extracted below 27 °C. The taut line: artichoke, fresh almond, a clean peppery catch at the finish.


TRADITION
Meule de Granit
Granite millstone and cold presses. The round line: ripe olive, sweet almond, a texture that almost coats the spoon.


THE TERROIR
One place, and nowhere else.
Tagzirt, in the foothills of the High Atlas, six hundred metres up. At that altitude the night falls markedly colder than the day: the fruit ripens slowly, and takes its time building aroma.
One variety, one plot, one vintage a year. Nothing is blended, nothing is bought in: what you taste comes from these 660 trees.

The picking
Olive by olive, by hand and with a hand rake. No vibrating comb, no beating: the wood that will carry next year's crop is left untouched.

The sorting
Every lot is sorted by hand before it goes to the mill, the same day it is picked.

The pressing
Mechanical extraction below 27 °C, within hours of the harvest.

The light
The oil runs, golden — nūr ʿalā nūr, light upon light.
