Closed-cycle continuous mill: the olives are crushed and then centrifuged away from the air, never above 27 °C, within hours of picking. The process is fast and keeps the green fruit intact — this is the taut line, artichoke and fresh almond, with a frank bitterness and a clean peppery finish. Minimal packaging, Amazigh motifs in tone-on-tone watermark.

Meule de Granit

Tiwizi — l'entraide du village

Granite millstone, then cold presses: the stone slowly crushes the whole fruit, pit included, before the paste is pressed below 27 °C. The yield is lower and the work longer — the oil comes out rounder, almost coating, on ripe olive and sweet almond. On the Cellar Reserve, the “Amazigh carpet” band carries the village motif.

Pourquoi deux prix ?

Le règlement délégué (UE) 2022/2104 réserve « première pression à froid » aux huiles pressées sous 27 °C avec une presse hydraulique traditionnelle ; « extraction à froid » couvre la percolation et la centrifugation. La différence entre les deux lignes n'est donc pas qu'une question de récit — c'est une distinction légale, la même qui justifie deux méthodes et deux prix.
