THE MILL, AND WHY IT MATTERS

A closed-cycle continuous mill: the olives are crushed and centrifuged away from the air, never above 27 °C, within hours of picking. The process is fast and keeps the olive's freshness intact. This is our lively range, all cut grass and artichoke.

Regulatory statement for this range : Cold extraction (< 27 °C)

EXPECTED TASTING PROFILE

Expected profile based on the variety, the land and the mill. It will be confirmed by the official sensory analysis (panel test) of the 2026 harvest, published on the batch traceability page.

NOSE
Early-picked olives: freshly cut grass, crushed leaf, raw artichoke.
PALATE
A clean, fresh attack, with green almond and a touch of tomato; bright and focused, never heavy.
FINISH
A clean, lingering finish on artichoke and green almond — the mark of a young oil.

TWO PAIRINGS

Sea bream or scallop carpaccio, with the oil poured at the last moment

Its grassy, artichoke notes lift the raw fish without cooking it, and stand up to the lemon instead of disappearing under it.

Burrata, a few fresh broad beans and a still-green tomato

The milky sweetness of the burrata lets the grass and artichoke come through: the pairing that shows this oil at its best.

L’ÉCRIN DE L’ATLAS, DESIGNED TO PROTECT THE OIL.

The flexible inner bag contracts as you pour, limiting the amount of air that replaces the oil. The opaque carton also shields it from light. Two complementary protections for regular use of an oil with character.

Storage life depends on temperature, handling, tap seal and frequency of use. Keep away from heat and light, and close the tap after each pour to help preserve the oil's aromas.

THE PRODUCER

Our family and the people who work with us, on the olive grove at Tagzirt (Béni Mellal-Khénifra, Morocco). Picked entirely by hand: no shakers, no beating, so as not to damage the wood that will bear the next crop.

AMAZIGH OIL · TAGZIRT

What gives our oil its value

One family olive grove in Tagzirt, 660 trees and one variety: Picholine Marocaine. We do not blend oils from unknown origins. Each harvest comes from these trees, this terroir and the work of our family and collaborators.

Care for the tree, respect the fruit

Harvesting is entirely manual. We do not beat the branches to dislodge the olives: trees are not struck, and we take care not to damage the branches that will bear future harvests. From tree to bottle or pouch takes less than 24 hours; we work quickly to protect the fruit.

Why does it cost more?

The price reflects a precise origin, manual harvesting, a single olive variety, rapid processing after picking and limited volumes. It pays for the care taken at each stage, rather than a standardised blend produced at scale.

La Lumière de l’Olivier is cold-extracted in a continuous mill below 27 °C. The process is designed to work quickly and preserve the olive’s freshness and aromas.

L’Écrin de l’Atlas: freshness protected

The flexible food-grade pouch contracts as oil is poured, limiting the air that comes into contact with the remaining oil. The opaque carton shields it from light. Together, these protections help preserve the aromas of filtered oil during use. Bag-in-Box is not a compromise on oil quality; it is a considered choice for preservation.

For the best aromatic quality, keep the Bag-in-Box away from heat and close the tap after each pour. Storage life also depends on handling and frequency of use.

From Tagzirt to your table

In Tagzirt, we aim to work close to the trees and mill, with respect for living nature at the heart of our approach. Transport to France is still necessary; grouping purchases can reduce the number of parcels and help limit the impact of delivery.
