THE EXTRACTION, AND WHAT IT CHANGES
Closed-cycle continuous mill: the olives are crushed and centrifuged away from the air, never above 27 °C. The process is quick and it keeps the green fruit intact — this is the taut line, the one that catches slightly at the back of the throat.

TWO PAIRINGS
Raw fish — sea bream tartare, scallops, ceviche
Poured raw at the last moment: the pepperiness lifts the flesh without cooking it, and the bitterness stands up to the acidity of the lemon.
Bitter greens — baby artichokes, broad beans, young spinach
The bitterness of the oil and that of the vegetable answer one another instead of cancelling out; it is the truest pairing of this line.
